This is one of those easy lifestyle dinner recipes. The unique thing about this recipe is; it uses Turkey! Turkey meatballs are extremely easy to prepare and will add a little authentic Italian to your diabetic diet. (For cheese lovers, add extra Parmesan cheese at the end!)

Pair this recipe up with noodles and you will not be disappointed.


Prep Time: 40 minutes – 1 hour

Yield: 12 meatballs

1 lb ground turkey or lean beef

1 garlic clove, minced

1 slice whole grain bread soaked in 1/4- 1/2 cup skim milk

2 Tbsp minced parsley

1 egg

1/2 cup of Romano or Parmesan Cheese

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix all ingredients together until well-blended
  3. Bake for 30-40 minutes until meat is nicely brown
